Obituary of Hung Foo "Wing" Chan
It is with sadness that the family of the late Hung Foo “Wing” Chan announces his death at the Dr. Everett Chalmers Hospital on Thursday, April 2nd, 2026, at the age of 90. Born in Canton, China, on November 12, 1935, he was the husband of the late Wai Heung Chan. Wai and Wing are perhaps best known as proprietors of the former Pink Pearl Restaurant in Fredericton, NB.
Wing leaves behind his children, Norman Chan of Fredericton, Rosemary Roy (Paul) of North Carolina, and Clara Chan of Florida; grandchildren, Alexander and Benjamin Roy; nephews, Kenneth Mah and Kai Wong; nieces, Sharlene Mah, Linda Wong and Mae Wong. In addition to his wife, Wai, Wing was predeceased by his parents, Neehong Chin and Sholong Mah of Boston, MA, USA.
Wing emigrated to Canada in the early 1960s where he met his long-time wife, Wai. They were married in 1965 staying briefly in Saint John before relocating to Moncton where Clara was born. The family moved shortly thereafter to their long-time home of Fredericton, where both Rosemary and Norman were born and the family grew up.
Wing worked as a cook at Seven Seas Restaurant, Capital Gardens and Ming Restaurant in Fredericton before he and his wife decided to open their own restaurant (The Pink Pearl) in 1989. The original Pink Pearl Restaurant was located adjacent to the Police Station on Queen Street in Fredericton. Unfortunately, this restaurant was destroyed by fire in October 1995. After a few years of early retirement, Wai and Wing decided it was time to revive The Pink Pearl, opening in a new location on Queen Street across from Officers Square in 1998. The restaurant closed for the last time in 2001. Both restaurants were very popular and received several write-ups in travel magazines and guides.
As a young man, Wing’s favorite pastime was fishing. Often when his children were younger, Wing would dash home from work, grab the fishing rod and the kids and take off to his favorite fishing hole. Wing also loved his HiFi stereo and delighted in playing Chinese Opera at high volume while singing… clearing the house of his and any other children that may have been at home at the time. After retirement, his favorite pastime was walking at the Regent Mall where he made many new friends.
A celebration of life in honor of both Wing and Wai will be held in late June. Arrangements are incomplete at this time but will be updated as soon as they become available.
